Curry Roasted Cauliflower

Curry Roasted CauliflowerThis roasted cauliflower gets an extra bit of zip from the curry powder. A simple and quick way to prepare a head of cauliflower, and a delicious way to enjoy it!

1 head cauliflower
2 tbsp olive oil
1 tbsp curry powder
1 tbsp lemon juice
1/2 tsp salt
handful of cilantro

Preheat the oven to 425 degrees. Cut the cauliflower into bite-sized florets. In a small bowl, whisk the olive oil, curry powder, lemon juice, and salt until combined. Toss the cauliflower in the sauce until coated. Spread out on a roasting pan. Roast in the oven for about 30 minutes, until tender and browned. Serve garnished with cilantro leaves and an extra squeeze of lemon juice.

Roasted Cauliflower

I often make this as a side to Indian main dishes, like chickpea tikka masala. The length of time needed to roast the cauliflower is usually just about right to pop this in the oven, cook the entree, and have a meal ready in 30 minutes!
